Meat recipe9 for Pot Roast 3 lb To 4 beef roast Salt pork 1 Onion; sliced Flour 3 c Water 2 Carrots 1/2 Bay leaf 1/2 ts Peppercorns or ground peper Wipe off the meat. Fry salt pork and onion together until onion is soft. Sprinkle roast with flour and brown on all sides in fat. Put meat, on a rack, in a Dutch oven rinse out frying pan and pour liquid over roast. Add remaining ingredients, cover tightly and bake slowly for about 3 hours. Make gravy from pan drippings. Serve with potatoes Garnish with parsley.
