Chicken recipe2 for Lemon Chicken Wonderful chicken portions with a nice tangy lemon glaze - serves 6 - Best suggested wine to server with this dish would be a white wine such Riesling or maybe a Gewurztraminer. Ingredients:Seasoned flour 6 to 8 chicken portions 1/4 cup of butter about 3 oz. Half teaspoon salt Parsley Pinch of thyme 3 tablespoons of oil 3 tablespoons lemon juice 2 level tablespoons finely chopped onions 1 level teaspoon black pepper Cooking Instructions: 1. Wipe the chicken portions and toss in the seasoned flour 2. Melt the butter in a shallow baking dish which will take the chicken portions without overlapping 3. Place the chicken portions skin-side down in the fat and cook just above the center of a moderate oven (350F, Gas Mark 4, 180C) for 25 minutes then turn and cook for a further 25 minutes 4. Blend together all the other ingredients for the glaze 5. Spoon the glaze over the chicken and continue to cook for a further 15 minutes, basting once during this time 6. Test the chicken to make sure the flesh is tender 7. Serve with a little of the glaze and a garnish of parsley
